The core of a visual novel is writing with visual elements that reflect what you are reading. I personally have never seen a visual novel that didn't also have music playing in the background, but it's not technically a requirement.
Most visual novels professionally made in the last decade will also have voice acting, and most visual novels will have choices of some sort in them, though those choices can range from simple route choices(G-Senjou no Maou, Grisaia no Kajitsu) to frequent and complex story forks(School Days, Yu-No), to almost entirely superficial with little actual effect on the story(Mu-Luv Alternative). Some visual novels have gameplay elements, and some newer ones are getting more complicated and engaging visual elements(like the one I posted a sample of in the last page).
One of the biggest differences between most visual novels and other storytelling media is the focus on characters. It is not uncommon for even plot-focused visual novels to spend hours exploring the characters and the dynamics of their relationships before getting to the "meat" of the story(which is why many anime adaptations of VNs have a "boring" first half). This tends to have the effect of creating a greater emotional connection between the reader and the characters than in other media. They go to great effort to make you actually care what happens to the characters in the story, and there are some songs from VNs that make me emotional just hearing them again because of the impact that the related stories had on me.
Basically, VNs are unlike pretty much anything else out there despite having elements in common with other forms of media.

Also, that story of mine that's set in the Persona universe... I'm actually writing it as if it WAS a VN as well as an RPG. But it's more of a Kinetic Novel kind of storytelling, the kind where it's more focused on the narrative rather than having choices (with the exception of one defining moment in the story that determines the ending). That being said, I do intend to include quite a lot of characterization, especially between the main character and his party members in general, to the point where they all become a surrogate family to the protagonist. I'm even writing it as if it was told with in-game text since I pretty much have no artistic talent, therefore I can't provide illustrations of the characters. Oh well. But yeah, other than Steins;Gate, my next VN will be "If My Heart Had Wings". I dunno, that one just intrigued me for some reason.

One often ignored part of the story... kind of... is Kimi ga Nozumu Eien, or as it is called in the west, Rumbling Hearts. An anime has been made from that, and I do recommend that one. It has no real relation to the plot of Muv-Luv, but some of the characters show up in Muv-Luv Alternative, and there are references to Rumbling Hearts in Alternative's dialogue.

Yes, Muv-Luv is a media series, incorporating visual novels, manga, and all kinds of stuff. It starts off with Muv-Luv, which is a fairly run of the mill dating sim: You are Takeru Shirogane, run-of-the-mill high school student with no particularly outstanding positive or negative characteristics, and have the opportunity to romance a selection of your attractive female classmates. Things get heavier with Muv-Luv Unlimited and Alternative, though. In those stories, Takeru suddenly gets transported into a terrifying alternate universe where humanity has developed giant mecha to fight a decades-long losing war against the alien BETA (Beings of Extra-Terrestrial origin which are Adversaries of the human race). The true nature of the BETA as well as the reasons behind Takeru's journey to an alternate universe are spoilers, so I don't want to give em away here, but suffice it to say it's an epic tale to find out.
Aside from Unlimited and Alternative, there are also several other Muv-Luv stories set in the alien war paralell universe. There's Total Eclipse, which revolves around a mecha test pilot, and Schwarzesmarken, which examines how the alien war and mecha technology affected the Cold War and the division between East and West Germany. Interesting stuff!

ChäoS;HEAd has one of the most depressing "Worst Endings" I've ever seen, along with one of the most depressing songs sung by Itou Kanako to go with it. Has any protagonist ever failed this hard before? Having to go through the pain of victims(one of which was a man who had his stomach cut open to have a fetus shoved inside, and no aesthetics was used), getting so mentally broken that he ends up retreating into some fantasy world where he gets all the girls, and then finally being dumped in some place like trash, only to get mercy killed because he was so broken. The world is ending. You failed. Here's a depressing song. Yeah.
