All the Japanese online stores I visited only shows preorders open for the Switch and PS4 versions, but no Xbox One. The reason I'm concerned is because my backer physical signed copy is set for Xbox One Japan. Should I change it or wait for an announcement?

I have no idea but at this point why would they? I’m sure it doesn’t make sense financially at all and if I were them I would certainly skip it.
Having said that I’d expect the campaign to honor the backers who asked for it though. Just wouldn’t expect the game appearing on store shelves in Japan for Xbox though.

If it's the case that only Japanese backers are getting the physical release for Xbox, I'd recommend getting it for collector's sake.
I'm sure they'd contact Japanese Xbox backers and offer another physical version in exchange, regardless of how late.
