First of all, I don't know if the Archive was intentionally turned off or not for the demo. If it was, this is pointless. If not however, it's a pretty big but not gamebreaking bug.
Simply put, the collections do not work. It does not show percentage of anything like items or demons, I cannot, say, enter the demon area and look at the demons I unlocked (I am assuming that you are meant to be able to enter the collections to see things you found), really the entire archive section is a hot mess.
Occurance: Every time. Severity: Not gamebreaking, but very annoying. I had hoped to find monster entries or test it out. Repeatable: Yes. Just go into the archives option in the menu.

I do think that % is turned off for the demo, because it doesn't work for me either.

It is turned off. The "--.--" signal is almost the same used back in 2016 for gold and map rate, where they simply put "----" to show that the game wasn't counting such things yet.
You can't have completion rate if they didn't even finished the game, much less in a demo that doesn't have the full content, i believe.
Those things are there just as placeholder and to show what you can find if you are a completionist.
