The interview can be found here. It actually touched upon a lot of topics including George Kamitani's influences, his past and future projects, what his team likes, etc. However there was that little aside question at the end which I'm sure would catch the attention of people here. I'm sure nothing is actually in the works and they are just "shootin' the shit" but its an interesting hypothetical to ponder. My personal thoughts is that I think it would be a great idea as long as it was more in vein of a "Classicvania" game. The aesthetics, art, characters, etc. would be amazing but I don't think level design is a strong suit of Vanillaware and I think that would make a good "Metroidvania" game harder for them to create. That and I think "Classicvania" games are under served - even if Bloodstained has a Classic mode. Thoughts?

I'd be down. I usually first think of Platinum (Kamiya has stated his favorite action game is CV1) or From Software when it comes to someone handling Castlevania for Konami, but it could work if like you said they can focus on great visuals and simpler game style. I can't imagine some RPG mechanics wouldn't make it in, so perhaps something more Castlevania 2 instead of full on Igavania?
The question is, do they revive something or make something completely new. There isn't much room in the franchise for another standalone canon entry, and many fans would be upset if Konami/VW now took liberties to take over the storyline and tell for example the 1999 Demon War as they see fit. I would probably only be all right with that if IGA himself was behind it.
So, here are a few possible avenues there I could imagine them doing: A) A re-re-revived Sonia Belmont in Castlevania Resurrection, non-canon, could become its own thing if successful, has a female lead which is a plus for VW, can more or less do whatever they want and not upset many people. Like I said, maybe more CV2-ish in keeping with now VW games usually are B) Castlevania 3 remake. Modern re-interpretations of the 4 playable characters with more attack options, more variety and length of gameplay, different interesting game dynamics depending on partners used/playing Trevor alone. Pretty good balance of brand/game recognition, established good design/music for them to use as necessary and a female character for Kamitami to have (hopefully not too much) fun drawing lol. C) They seem to do best with fantasy medieval settings and multiple characters/multiplayer, so perhaps something in the spirit of a game like Castlevania 3, but instead of a remake, more of a Dragon's Crown/D&D Shadow Over Mystara-ized CV3. 4 players can cooperate at once, including 1-2 new characters...a female "healer" acquaintance of Sypha's and something of a larger/bruiser type tank character, maybe an exaggeratedly large Kamitami axe armor, perhaps golem-ized with Sypha's magic.
Or something completely different, of course...as different as Order of Ecclesia was, maybe. I like the above 3 ideas pretty well, though.

I must say that Vanillaware did a great job despite all of the insanely bad publicity they may have gathered (Dragon's Crown, anyone?). They are extremely strong when it comes to the brawler/beat 'em up genre, but I don't think they'd be ready for a pure, old-school CV game/-vania, which by essence, requires a lot of platforming. They're more into the intense, brutal, combo-at-will action in a medieval setting.
They in sense fit the arcade spirit, not so much the original CV. The latest entries of the series would fit them more... but they're in 3D. In the end, would it work out? I would give them a chance and I am sure they'd produce something very decent, but I feel they would opt for an entry with a radical twist.
Many franchises radically changed their formulas over the decades anyway, so... who knows?

Around the time the Kickstarter first appeared, Vanillaware was the first developer I thought of for IGA to team up with. I think they could pull off a great game.

I don't know vanillaware other than dragons crown, which is an amazing game.
To me Castlevania has to have Yamame at this point (thats her name right? I forget), but aside from that, I think Vanillaware has a better shot of doing castlevania justice than konami. Classic, metroidvania, 3d LoI or CoD, don't care. I'd be willing to see em all.

Heck, I would go as far as say that while I would definitely want them to come up with ideas for the play style, have another team altogheter handle that. Their games always feel a bit... odd, to me at least. Can't quite put my finger on it, however. Like, for example, if its a pure classic CV, their odd fascination with RPG elements just have to go. They belong somewhere else, and I'm sure they would be better suited for some other genres (for example, a Metroidvania)
