I'm going to do something I have put off / forgotten to do forever, and this is the perfect time to do it:
Play the Saturn version of Symphony of the Night, aka 悪魔城ドラキュラX月下の夜.
Naturally, the reason being that the Saturn version is effectively the definitive version. What we have in the PS1/XB360 iterations is almost like the final stable beta by comparison. I can't say I've finally put the game behind me without having explored all the exclusive rooms, heard all the new music, and beaten the game with Maria.
Too bad there isn't an emulator with better-than-bilinear screen filtering. 240p is brutal these days.

Oh boy, with the collector's bubble in full bubble mode now, them Saturns are only going to get more expensive.
This can't be good...

The Saturn version is NOT the definitive version! Please, do not say something like that, it's not accurate to say that AT ALL.
The Saturn version has a few extra areas and items, and it is for sure worth it to play through this version once or twice to be able to see this novel content.
But the awful lag, HORRIBLE, CONSTANT slowdown, annoyingly long loading times, extra loading points (for example, the entrance at the top of the stairs to Richter's chamber is now a loading point) annoying-to-use map (can only access map from the pause menu), missing graphical effects (there's no fog in Outer Wall, Mist form is ugly as hell, etc.) and a whole bunch of other problems make it NOT the "definitive" way to experience the game in the SLIGHTEST!
I would say the XBLA version is the definitive one. The PSP version included in Dracula X Chronicles is also noteworthy, because it includes Maria (though she's completely different to the Saturn Maria), yet this version has a tendency to crash.

It would be great if they could revise/optimize the Saturn content into a modern port to make it all a complete, cohesive game. Probably a good step for the company at this point to--

I don't mind Yuri Lowenthal's performence of Alucard, he didn't do a bad job in my opinion. His higher-pitched voice is definitely very different to Robbie Belgrade's performance, so it would take some getting used to, I suppose. What I lament the most was the script changes. It's strange - the PSP version's script is different, but contrary to what people might say, it's NOT more accurate to the Japanese original script at all. The PSP's script is the same "idea" as the PS1 English script, but made more serious, with no more bizarre, hammy lines. I understand that the intent was to have relatively serious dialogue, so the PSP succeeds in that sense, but the PS1 original is such a classic, you can't not miss it. Japanese players don't have any notion of this, since to them the game always had serious dialogue.

To me in 1998 it was cool af and I loved it.
I mean, the only other games I'd heard acting for were like...RE1, Megaman X4 and other usually very short (bad) snippets of dialogue in other games. SotN sounded pretty awesome.
Even in the case of RE1/X4's acting, I wouldn't trade those for anything either lol. WHAT! WOAH...what is it? I hope this isn't Chris' blood...
I'll be examining this. See if you can find nay other clues. *stares at blood indefinitely*
Actually, anyway, what even was this "Saturn news"? Something about nailing down perfect emulation, I guess? That may or may not help in my efforts to play Dragon Force 2 without it blowing up.

The voice acting isn't bad per se, but it was so different from the original, it came off quite glaring. I didn't know they had changed the script/voice acting when I fired it up (after unlocking it in DXC). It was definitely a WTF moment. For me, it was a change for the worse.

If I recall, I remember reading something about Sony wrangling exclusivity for certain games like SotN, but the extra content that was included in the Saturn version was supposed to make it the "fully idealized game" in terms of content. Unfortunately, the port was botched by a dev that really didn't fully understand how the Saturn worked regarding certain aspects of the game that only the playstation could do (Transparency was especially difficult.) SO even though we got Maria and an extra location, the game is lackluster otherwise. I'd opt for the PS1 port anyday.

IGA's GDC 2014 presentation goes into really interesting detail on how they managed to optimize the game to display and play as best they could on the PS1. It sounded like a great challenge, and a lot of that work was lost on the move to the Saturn, apparently.

You only forgot the ugly ass enemies and extra boss. Dont make the same mistake I did and stay away from the Sega Saturn version. Iga banned the extra content for a good reason.

The saturn version is the best! I have beaten it twice by now. At the (trade) cost of somewhat worse graphics and the inability of "wolf swim exploration" (but there still is a way to explore the elusive tiles anyway), you get all the extra content missing from EVERY other version, modern remakes included. There is a ton of new items added, even special weapons, decorative items even (like that poster), the bosses like Maria and Skeleton King are nice additions and the new enemies, although not very innovative, still give a ton of XP (plus interesting drops).
Any anime fan would immediately love the Japanese dub and won't have any problem navigating the menus and using the items; besides, using an item database for reference and remembering the unique item sprites, you can easily guess which item is which, almost immediately! If you play it on emulators, though, remember that Saturn rom is much more stable than PS1 iso. PSX gets lags, audio issues at certain points (most usually library area and loss of certain enemy cries/sound effects) and is overall much less stable, generally speaking.
Saturn SotN also has a huge soundtrack playlist readily available in game's title from the beginning (it is a real treat being able to listen at the amazing work of Michiru anytime you wish, plus to arrange it for loops or anything you feel like)! Also, all known tricks (like keeping Alucard items, getting infinite gems or whatever else), work here, as well! The extra familiars are funny and the fairy song really soothing, to say the least! And that third hand to use more items together, is nothing to scoff about, either!
Everyone HAS to play this one on Saturn. It is an improvement in pretty much every aspect, minus graphics; but everyone knows that gameplay/content >>> graphics always, at any time! Some go so far as to cry: "Saturn version is a graphical mess and full of fillers"! That couldn't be more faraway from the truth. Plus, playing as maria and summoning the divine beasts, is broken and fun at the same time! Modern remake with Maria playable differ both in brokenness and style; Saturn's one is the best one ever, at least yet!
