I'm hoping I can still play offline if my internet drops. Offline games are a dying breed these days so I'm curious about this one.

You can get the GOG version, but I think even Steam allows you to play games offline, right? Yeah, check it out. |

I think the concern is if the game itself would check to their own servers, not steams, and I doubt that would be the case.

I doubt it because any DRM like that and I won't support them again. It's very unlikely that they place a online only DRM.

That was my thought too. Especially since they're doing handheld. Literally every steam game that I own can be played offline. And as sleyer said, the game is coming to handhelds, so I'm sure you can download it directly onto your pc once you get your copy, and play offline. :p In fact the only reason I can see to go online for Bloodstained would be to do the multiplayer, or to download staggered DLCs. :p |

This is very unlikely, thank goodness, and I agree it would kill a lot of my hype for the game. Really, only very large franchises can get away with this. An indie game going with this model would be contrary to their very essence.
Worst case, we're here and have a direct line to the developers! Off topic but somewhat related, hopefully Street Fighter either cuts this off or never does it again...
