Am I dating myself by saying that I prefer older Thrash Metal and Symphonic Metal?
For whatever reason I have difficulty taking bands where the lead singer sounds like the cookie monster seriously.

For whatever reason I have difficulty taking bands where the lead singer sounds like the cookie monster seriously. That's understandable. To me I actually prefer it in a strange way... You see I generally dislike singing and vocalists. Instruments sound so much better than singing. 'cookie monster' vocalists minimize this bother to me because t hat style of singing is often quieter in the end result for the music.. I mean the singer might be shouting or something but in the actual studio they lower the gain of the singer so that they are kinda on the same level as every other individual instrument. Music with NORMAL vocals on the other hand FREQUENTLY have the singer as the forefront of the music.

I often listen to music while working, and lots of times will listen to instrumental stuff as I find the singing/lyrics distracting to a degree depending on what I'm working on.

Remember, if you like instrumentals, you can find just about any song out there with the lyrics removed.
And if you happen to be in an old school NES mood, there's likely some good stuff for you too. The better ones have tones included to replace the vocals.
... and if you happen to be in the mood for McDonalds there something out there for you as well, although this does have vocals.

This may be a little off topic, but what do you guys think is the most "Castlevania" sounding band out there? The closest I can think of off the top of my head is Yngwie Malmsteen, but his music isn't quite dark enough:

That's tough. The Castlevania music covers such a broad range I'm not sure I could say that a specific band is the most "Castlevania" sounding. For me it would likely end up being something that sounds along the lines of my favorite Castlevania tracks and would more likely be individual tracks rather than a specific band.
For example, I think Epica - Cry for the moon would fit into a Castlevania game quite well, but I would not consider the band Epica the most "Castlevania" sounding band out there.
I definitely like the Yngwie Malmsteen stuff and it would be fitting for Castlevania music, but it seems a little heavy on the guitar to be considered the most "Castlevania" sounding band since there's so much Castlevania music that doesn't have a guitar prominently featured in the music.

Symphonic metal IMO doesn't really fit the series because of the general mood of the genre. Symphony is a key element to the Castlevania atmosphere but it needs to be in the right mood to really fit.
Yngwie nails the neoclassical aspect of the music score, this track in particular has the main riff straight from Dwelling of Doom (Simon's Quest), or maybe the other way around.
That being said, some melodic death metal could fit quite nicely in Castlevania, like this record from the american technical/melodic death metal Inferi
There's the necessary amount of darkness, but plenty of really grandiose melodies and solos, and also symphonic touches.
On another note, I think the last two records from Tribulation would fit really well. They're really different from Inferi, it's relatively soft heavy metal/gothic rock with occult themes, which would already be enough, but the black metal influences add some really eerie atmospheres and so IMO Children of the Night and Down Below are two of the most fitting "metal" albums for the series I can think of right now. I mean, 6:57 sounds straight from "Beginning" (Castlevania III) !

Personally I think the Inferi song is a bit heavy to fit in with what I would normally consider Castlevania music. The Tribulaiton Down Below album would fit very well with Castlevania music. Now that I've heard it I'd say that's about as close to a Castlevania album as you're going to get in the Metal genre without it specifically being covers of Castlevania music. ... and just to keep things somewhat random, here's Asswolf by Gutalax. For the record, I think I take the Pig Metal stuff even less seriously than music by the Cookie Monster.

I don't know any bands that make me go 'this needs to be in castlevania'. but Summoning REMOTELY kinda sounds similarish.. I mean I wouldn't really call castlevania metal soo. but yeah anyway.
That's just one song but they all kinda have that sort of sound.

So I moved half a year ago, and got around to unpacking a box I haven't gotten around to unpacking for reasons. Found some of my old music cds, ok, then saw a band I completely forgot about. I didn't actually like the band enough to buy most of their albums, but they had one I really liked.
stupid link keeps starting 2 minutes in. whyy.
I didn't forget this band. But sharing it anyway cuz I love this album (and the one after, the one after that felt like they 'sold out' a little unfortunately).
Back when this music was current, you weren't allowed to say you liked that band because they were CHRISTIAN (supposedly, I don't even know how people can tell tbh). oh my god! It was kinda silly but metalheads had to have a stick up their ass about Christians much like some notorious athiests do. Personally I never cared, still don't, I just liked how they sounded ffs.

I never used whether a band was Christian or not as a factor to decide whether I liked a band. Usually I don't learn until considerably after the fact whether a band considers itself Christian and have already made up my mind about how I feel about them at that point. If someone came to me and said a band I liked wasn't a real band because it was a Christian band I'd basically tell them that I don't really care and like the band anyway.
Christian movies I tend to be skeptical of though as they have a tendency to have a cringe worthy combination bad acting and a plot that beats you over the head with the fact that it's a Christian movie.
Here's some Iron Maiden, just because it came up here recently.
... and here's a random cover of the same song
